PREPARING STUFFED SQUID

Ingredients:


  • 2 slices of bread
  • 20 g of parmesan cheese
  • 2 eggs
  • extra virgin olive oil
  • 2 cloves of garlic
  • Half an onion
  • Parsley
  • White wine
  • Salt and pepper
  • Black olives and capers (optional).

Preparation

Clean the squid, skin them and rinse them well. Now cut the squid tufts into very small pieces and brown them in a pan with oil and a clove of garlic.


Deglaze the tentacles with the wine, lift out the garlic clove, and add the breadcrumbs, previously soaked in milk and squeezed dry, along with the chopped parsley and garlic, salt and pepper, if desired, and a sprinkle of capers and chopped black olives. Transfer the mixture to a bowl, add the egg and Parmesan cheese. Mix until smooth. Use a teaspoon to fill the calamari 3/4 full with the filling.


Secure the stuffed calamari with toothpicks. Heat the oil with a clove of garlic in a pan and cook the calamari for about ten minutes, turning occasionally.


Deglaze the stuffed calamari with white wine, add the chopped parsley, and gently prick the squid pouch. Cook for a couple more minutes, then transfer the stuffed calamari to plates and serve.
