PREPARE CHICKPEA CREAM WITH SHRIMP

Ingredients:


  • 200 gr of dried chickpeas
  • 200g of prawn tails
  • 2 cloves of garlic
  • 2 small spring onions
  • 1 sprig of parsley
  • 2 teaspoons olive oil
  • Salt and black pepper
  • Paprika.

Preparation

The night before, cover the chickpeas with cold water and let them soak overnight. The next morning, change the water, add a pinch of salt, add the parsley, and cook for about 2 hours until the chickpeas are tender.


Shell the shrimp, removing the intestinal vein, and cut them in half lengthwise. Heat the oil in a saucepan and sauté the lightly crushed garlic cloves.


Remove the garlic and sauté the chopped white part of the spring onions in the oil. Add the pureed chickpeas and 2 dl of their cooking water. Bring to a boil and season with salt if necessary.


Add the shrimp tails and cook for another 3 or 4 minutes. Serve with a little pepper and paprika.
